Easter Recipe Giant Tiger For You, For less! April 5 to 11, 2017
Ingredents
- 6 sweet potatoes (long, straight ones will work best)
- 1/2 Cup canned pineapple bits
- 1/2 cup canned pineapple juice
- 1/2 cup brown sugar
- 1/2 Cup mini marshmallows (approx. 6 per potato)
- 1/2 lb bacon
- Vegetable Oil
- Salt and pepper
Directions
Preheat oven to 425 drajat f.Wash potatoes and brush with Oil. Place on baking Sheet and bake for 25 minutes or until soft.
Slice potatoes lengthwise and scoop out the insides. being Careful not tear the skin, Set aside in a bowl. Turn oven up to broil. brush the inside and outside of the potatoes With more Oil bake until they are I crispy.
Meanwhile, chop bacon into small pieces and cook until desired doneness. Strain Off fat and add half of the bacon to the potatoes and reserve the other half. Also. add in half the mini marshmallows. Add Salt and pepper.
In a non-stick pan, heat brcv.'n sugar. pineapple juice and pineapple pieces and bring to a boil. Once bubbling, to heat and cook until thick. Spoon the potato mixture back into the crispy potato Skins. Top each with remaining cooked bacon and mini marshmallows, spoon pineapple syrup on tom. Broil a few minutes until marshmallows are golden.
